High Protein Spinach Pancakes
200gm egg whites
30gm vanilla whey protein
1 cup rolled oat flour (blended oats)
1 tsp cinnamon
Handful baby spinach
3 tsp 100% Stevia
Sugar Free Maple Syrup - For Topping (Optional)
Handful Blueberries - For topping (Optional)
- 1 Tsp of grass fedd butter or coconut oil into a small pan and preheat on low heat.
- Combine all ingredients and mix with in blender.
- Pour small amount of mixture in pan and cook until bubbles start appearing around outside of pancakes then turn over till golden brown.
Mixture will make 2 servings
If you find these pancakes need a little topping here are some options:
- Handful of berries liquified in a pan and drizzled over pancakes
- Sugar free maple syrup
- Lemon and raw stevia mixed together drizzled over pancakes
- Fresh blueberries - 50gm
